- - 1 roll of puff pastry (400 g)
- - Orange marmalade
- - Powdered sugar for dusting

- - 400 ml milk
- - 60 g sugar
- - 2 egg yolks
- - 30 g cornstarch
- - 1 tsp vanilla extract

- - A splash of cream
Directions
Preheat your oven to 190 degrees Celsius (top and bottom heat).
Start by preparing the vanilla pudding. Heat the milk in a saucepan, being careful not to boil it. In a bowl, mix sugar, egg yolks, cornstarch, and vanilla extract.
Gradually pour the warm milk into the egg mixture while stirring constantly. Return the mixture to the saucepan and heat while stirring until it thickens into a pudding. Allow the pudding to cool.
Roll out the puff pastry and cut it into 8 equally sized squares.
Spread orange marmalade on one square. Fold the corners of the square towards the center to create a pocket, and press the center with a fork.
Mix one egg yolk with a splash of cream and brush the surface of the pockets.
Spoon about 1-2 tablespoons of pudding into the center of each pocket.
Bake the pastries in the preheated oven for about 18 minutes or until golden brown.
Allow the Orange Pastries to cool after removing them from the oven, then generously dust them with powdered sugar.
