    Roll out the dough into a rectangle about 0.5 cm (¼ inch) thick. Spread evenly with strawberry jam, leaving a small border. Roll up tightly from the long side into a log.

The first step exists as a check: after 10-15 minutes in the well of lukewarm milk, sugar and yeast, the mixture should look visibly foamy. If nothing happens, the yeast is likely dead or the milk was too hot - it should be lukewarm, not warm to the touch. Start over with fresh yeast, because no amount of extra rising time will save a dead starter. Also give the dough a genuinely warm, draft-free spot for the 1-1.5 hour rise.

Any thick jam works - apricot, cherry, or raspberry - as long as it is spreadable but not runny, since a thin filling leaks out during baking. Fresh strawberries are not a good substitute here: they release water into the dough and make the rolled log soggy. If your jam is very loose, stir it smooth and use slightly less than the 150 g so the spiral still holds its shape.

Yes - after kneading in the butter, cover the dough and let it rise slowly in the fridge overnight instead of 1-1.5 hours at room temperature. The next morning, let it come back to room temperature before rolling it out, otherwise the cold butter makes the dough crack. Shape, do the second 20-30 minute rise on the tray, then brush and bake as written.

Usually the border was too small or the log was rolled too loosely. Leave a clear jam-free edge along the long side so the seam can seal, and roll tightly enough that there are no air gaps. When you press each slice slightly flat, place it seam-side down on the parchment, and space the pieces apart since they expand during the second rise and in the oven.

These are at their best straight from the rack, still slightly warm, so bake what you plan to eat that day. Leftovers keep in an airtight container at room temperature for a day or two; a few minutes in a warm oven brings back the soft texture much better than a microwave. They also freeze well once fully cooled - thaw, reheat briefly, and dust with fresh powdered sugar, since the first dusting dissolves in storage.
