Preheat the oven to 180°C (350°F) top and bottom heat (or 160°C fan-forced). Lightly grease the muffin tin.

In a large bowl, mix the sunflower oil with sugar, vanilla sugar, and eggs until creamy. Add the lemon juice and zest.

In a separate bowl, combine the flour, baking powder, and salt. Gradually add the flour mixture and milk alternately to the oil-egg mixture, stirring until a smooth batter forms.

Evenly distribute the batter into the 12 wells of the muffin tin, filling each about 2/3 full.

Cut the cold butter into small cubes. In a bowl, mix the flour, sugar, and a pinch of salt. Add the butter and work it into coarse crumbs using your hands or a pastry cutter.

Sprinkle the streusel evenly over the batter in the tin and press them down lightly to ensure they don’t fall off while baking.

Bake the mini cakes in the preheated oven for about 20-25 minutes until golden brown. Test with a toothpick to see if they are done. Remove from the oven and allow them to cool completely in the tin.

Mix the powdered sugar with lemon juice until smooth and slightly thick. Adjust the amount of lemon juice to get your desired glaze consistency.

Drizzle the glaze over the cooled mini cakes using a spoon or piping bag.
