Ingredients
- - 200 g all-purpose flour
- - 150 g sugar
- - 1 1/2 tsp baking powder
- - 1/2 tsp baking soda
- - 1/4 tsp salt
- - 3 medium eggs
- - 120 ml vegetable oil
- - 180 ml milk
- - Zest of one lemon
- - Juice of one lemon
- - 100 g sugar
- - 30 g cornstarch
- - 1/4 tsp salt
- - 300 ml water
- - 3 egg yolks, beaten
- - 60 ml fresh lemon juice
- - 1 tbsp unsalted butter
- - Zest of one lemon
- - 240 ml heavy cream
- - 2 tbsp powdered sugar
- - 1 tsp vanilla extract
Directions
- Preheat oven to 180°C (350°F) and grease a rectangular baking pan (30 x 12 cm)
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk eggs, oil, milk, lemon zest, and lemon juice. Gradually add the wet ingredients to the dry ingredients, stirring until smooth. Pour the batter into the prepared pan.
- Bake the cake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. If the cake domes too much, trim the top off after cooling to create a flat surface. Let the cake cool completely.
- For the lemon pudding, combine sugar, cornstarch, and salt in a saucepan. Gradually whisk in water and cook over medium heat until thickened. Slowly whisk half of the hot mixture into the beaten egg yolks, then return to the saucepan. Cook until thickened. Stir in lemon juice, butter, and lemon zest. Allow the pudding to cool completely, then beat until creamy.
- Whip the cream with powdered sugar and vanilla extract until stiff peaks form. Pipe the whipped cream decoratively on top of the pudding and garnish with small lemon pieces.
- Chill the cake for at least 2-3 hours or overnight in the refrigerator. Slice and serve.
