In a large bowl, mix flour, sugar, dry yeast, and salt. Add lukewarm milk, melted butter, and the egg. Knead everything into a smooth dough. Cover the dough and let it rise in a warm place for about 1 hour, until it has doubled in size.

In a bowl, mix ground hazelnuts, sugar, vanilla extract, milk, and egg white until a spreadable consistency is achieved.

Roll out the risen dough on a lightly floured surface into a rectangle (about 0.5 cm thick). Evenly spread the hazelnut filling over the entire surface. Roll the dough into a log and cut it into even slices (about 8-10 pieces). Gently press each slice to flatten slightly.

Beat the egg yolk with the milk and brush the brioche rolls with this mixture. Sprinkle with coarsely chopped hazelnuts.

Preheat the oven to 180°C (356°F). Place the rolls on a baking sheet lined with parchment paper and let them rise for another 15 minutes. Bake in the preheated oven for about 15-20 minutes until golden brown.

Remove the rolls from the oven and let them cool on a wire rack.
