Ingredients
- - 100 g dark chocolate
- - 100 g butter
- - 150 g sugar
- - 2 eggs (size M)
- - 75 g all-purpose flour
- - 1 tbsp cocoa powder (unsweetened)
- - 1 pinch of salt
- - 1 tsp vanilla extract
- - 100 g butter (room temperature)
- - 100 g brown sugar
- - 1 egg (size M)
- - 150 g all-purpose flour
- - 1/2 tsp baking soda
- - 1 pinch of salt
- - 100 g chocolate chips or chopped chocolate
Directions
- Preheat the oven to 180°C (350°F) top and bottom heat (or 160°C convection). Grease the square muffin pan, dust with cocoa powder (unsweetened), and place in the fridge.
- Melt the chocolate with butter, stir until smooth, and let cool slightly.
- Beat sugar and eggs until frothy. Add the chocolate-butter mix and vanilla extract, and mix well.
- Mix flour, cocoa powder, and salt in a separate bowl, then stir into the chocolate mixture until smooth. Fill the batter into the muffin pan and set aside.
- Cream the butter and brown sugar, then mix in the egg and vanilla extract. Stir in the flour, baking soda, and salt. Fold in the chocolate chips. Set aside.
- Bake the brownie layer for 5-6 minutes.
- While the brownies bake, form 12 cookie dough balls. Flatten them and place on top of the pre-baked brownies.
- Bake for another 15-20 minutes until the cookie layer is golden and the brownie layer is set but still moist. Test with a toothpick (it should come out with moist crumbs).
- Let the Brookies cool completely in the pan before removing them to keep their shape.
