Preheat the oven to 180°C (350°F) top/bottom heat. Grease the tartelette molds well.

Roll out the puff pastry and cut it into 6 equal circles using the tartelette molds as a cutter. Carefully place the dough circles into the greased molds, pressing gently from the center outwards to form a raised edge. Prick the bottom with a fork several times to prevent it from puffing up during baking.

In a bowl, beat the cream cheese with sugar until creamy. Add the egg, vanilla extract, Greek yogurt, lemon juice, and cornstarch, and mix until smooth. Evenly distribute the filling over the prepared puff pastry bases.

Cut the apricots into small pieces and spread them over the cheesecake filling.

Bake the tartelettes in the preheated oven for about 20-25 minutes, until the puff pastry is golden brown and the filling is set. Remove from the oven and let them cool completely.

Carefully remove the tartelettes from the molds. Brush the tops of the cooled tartelettes with maple syrup to give them a nice shine and a sweet touch.

Finally, dust the tartelettes with a little powdered sugar.
