Ingredients
- 125 g all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 pinch of salt
- 60 g sugar
- 1 egg (size M)
- 60 ml vegetable oil
- 120 g plain yogurt
Directions
- Preheat the oven to 180°C (350°F) and line a muffin tin with 6 paper liners.
- In a large bowl, combine the flour, baking powder, baking soda, and salt.
- In a separate bowl, lightly whisk the egg. Add the sugar, vegetable oil, and yogurt, mixing well until smooth.
- Add the dry ingredients to the wet ingredients, gently mixing until just combined. Be careful not to overmix to keep the muffins fluffy.
- Divide the batter evenly among the 6 muffin liners, filling each about two-thirds full.
- Bake the muffins in the preheated oven for 18-20 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Dust with powdered sugar if desired.
