- - 175 g all-purpose flour (Type 405)
- - 150 ml lukewarm milk
- - 5 g fresh yeast
- - The prepared pre-dough

- - 125 ml lukewarm milk
- - 60 g sugar
- - 60 g soft butter
- - 1 egg
- - A pinch of salt
- - 200 ml milk
- - 15 g cornstarch
- - 35 g sugar
- - 2 egg yolks
- - 1 teaspoon vanilla extract
- - 1 egg yolk whisked with 1 tablespoon cream or milk for brushing
- - Pearl sugar for sprinkling
Directions
- In a bowl, mix flour, lukewarm milk, and yeast for the pre-dough. Cover and let it rise in a warm place for about 30 minutes.
- Add flour, lukewarm milk, sugar, soft butter, egg, and a pinch of salt to the pre-dough. Knead everything into a smooth dough.
- Cover the dough and let it rise in a warm place for about 1 hour, until it doubles in volume.
- In a pot, heat milk, cornstarch, and sugar while stirring egg yolks until the mixture thickens. Add vanilla extract. Remove from heat and let it cool.
- Shape the risen dough into 17 small balls (50 g each) and place them on a baking sheet lined with parchment paper. Let the dough balls rise slightly.
- Brush the dough balls with an egg yolk-cream or egg yolk-milk mixture.
- Place pudding strips on the dough balls.
- Sprinkle pearl sugar generously over the pudding strips.
- Preheat the oven to 180 degrees Celsius and bake the dough balls for about 15-20 minutes until they are golden brown.
- Remove from the oven, let them cool completely, and generously sprinkle with powdered sugar.
