Ingredients
- 100 g softened butter
- 100 g fine sugar
- 2 medium eggs
- 1 organic lemon (juice and zest)
- 50 g fine cornmeal (polenta)
- 80 g ground almonds
- 40 g all-purpose flour
- 1 tsp baking powder
- 1 pinch of salt
- 50 ml lemon juice
- 50 g sugar
- Powdered sugar for dusting
- Lemon slices or fresh lemon zest (optional)
Directions
- Preheat the oven to 180 °C (356 °F) top and bottom heat or 160 °C (320 °F) fan. Line the base of a 19 cm diameter springform pan with parchment paper and grease the sides.
- Cream the butter and sugar in a bowl until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon zest and juice.
- Mix the cornmeal, ground almonds, flour, baking powder, and salt in a separate bowl. Gradually fold the dry mixture into the wet ingredients until well combined.
- Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 30–35 minutes, or until golden and a toothpick inserted into the center comes out clean.
- While the cake is baking, gently heat the lemon juice and sugar in a small saucepan over low heat until the sugar is fully dissolved.
- Poke small holes all over the warm cake with a toothpick and evenly drizzle the hot lemon syrup on top. Let the cake cool completely in the pan.
- Dust with powdered sugar and garnish with lemon slices or fresh zest if desired.
