Ingredients

    • 2 sheets of puff pastry (about 275 g each, refrigerated)
    • 100 g ground almonds
    • 80 g sugar
    • 1 tsp cinnamon (optional)
    • 1 egg white (Size M)
    • 2 tbsp cream
    • 1 tsp vanilla extract
    • 1 egg yolk + 1 tbsp milk (for brushing)

    Directions

      1. In a bowl, mix the ground almonds, sugar, cinnamon, egg white, cream, and vanilla extract until a spreadable paste forms.
      2. Roll out the first sheet of puff pastry and spread the almond filling evenly over it. Place the second sheet of puff pastry on top and press down lightly.
      3. Cut the layered pastry into strips about 2 cm wide.
      4. Carefully twist each strip into a spiral, then shape each twisted strip into a swirl and place on a baking sheet lined with parchment paper.
      5. Beat the egg yolk with 1 tbsp of milk and brush the swirls with the mixture.
      6. Preheat the oven to 180 °C (350 °F) and bake the swirls for 20–25 minutes until golden brown and crispy.
      7. After cooling, dust with powdered sugar.
