Ingredients
- - 250 g flour
- - 125 ml milk
- - 50 g sugar
- - 40 g melted butter
- - 1 egg
- - 1 tsp dry yeast
- - A pinch of salt
- - 2 egg yolks
- - 250 ml milk
- - 50 g sugar
- - 20 g cornstarch
- - 1 tsp vanilla extract or the seeds of a vanilla pod
Directions
- Dissolve the dry yeast in lukewarm milk and let it sit until it froths. In a large bowl, mix the flour with sugar and a pinch of salt.
- Add the melted butter and beaten egg to the flour, then add the yeast-milk mixture. Knead everything into a smooth dough. Add more flour or milk if needed to achieve the desired consistency.
- Cover the dough and let it rise in a warm place for about 1 hour, until it doubles in size.
- For Custard Cream
- Meanwhile, prepare the custard cream. Heat the milk in a saucepan until it simmers. In a bowl, whisk the egg yolks with sugar and cornstarch until the mixture is pale and creamy.
- Slowly pour the warm milk into the egg mixture, stirring constantly to temper the eggs. Return the egg-milk mixture to the saucepan and heat over medium heat, stirring constantly, until the custard thickens.
- Remove from heat and stir in the vanilla extract or seeds. Let the custard cream cool.
- Final Steps
- Roll out the risen dough into a rectangle on a floured surface.
- Spread the cooled custard cream evenly over the dough. Roll up the dough from the long side to form a long roll.
- Cut the roll into slices about 2 cm thick, slightly flatten them and place the slices on a baking sheet lined with parchment paper. Let the swirls rise again for another 15-20 minutes.
- Preheat the oven to 180°C and bake the pudding swirls for about 15-20 minutes, until golden brown. Remove from the oven and let cool completely.
- Dust with powdered sugar, if desired, and serve.
