Ingredients
- - 250 ml milk
- - 3 egg yolks
- - 50 g sugar
- - 20 g cornstarch
- - 1 tsp vanilla extract
- - 1 roll of puff pastry (about 400 g)
- - Egg yolk for brushing
- - 1 tsp cream or milk for brushing
- - Powdered sugar for dusting
- - Raspberries and blueberries for decorating
Directions
- Heat the milk in a saucepan until hot but not boiling.
- In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the hot milk into the egg yolk mixture, stirring constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
- Remove from heat and stir in the vanilla extract.
- Transfer the vanilla custard to a bowl, cover with plastic wrap (placing it directly on the surface of the custard to prevent skin from forming), and let it cool completely.
- Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
- Cut the puff pastry into equal-sized squares, about 8 x 8 cm.
- Place a dollop of vanilla custard in the center of each square.
- Bring the corners of the squares together and lightly pinch to form pockets.
- Brush the pockets with a mixture of beaten egg yolk and cream or milk.
- Place the pudding pockets on the prepared baking sheet and bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
- Remove from the oven and let them cool slightly. Dust with powdered sugar and decorate with raspberries and blueberries.
