Ingredients
- 35 g flour
- 65 ml water
- 25 g butter
- 1 egg
- Pinch of salt
- Pearl sugar (Hagelzucker)
- 2 egg yolks
- 200 ml milk
- 50 g sugar
- 15 g cornstarch
- 1 tsp vanilla extract
- 100 ml whipped cream
Directions
- Whisk egg yolks, sugar, and cornstarch in a bowl. Heat milk (not boiling) and slowly pour it into the egg mixture while stirring constantly.
- Pour the mixture back into the pot and thicken over medium heat.
- Remove from heat, add vanilla extract, and let the cream cool completely.
- Preheat the oven to 190 degrees Celsius (top and bottom heat, middle rack). In a pot, bring water, butter, and salt to a boil.
- Add the flour all at once and stir until the dough comes away from the pot’s bottom.
- Remove the pot from heat and let the dough cool. Add the egg, stirring constantly until smooth and glossy.
- Fill the dough into a piping bag. Pipe small portions of dough with a diameter of 3 cm onto a baking sheet lined with parchment paper. Brush with egg and sprinkle with pearl sugar.
- Place in the preheated oven. After 20 minutes, reduce the temperature to 170 degrees and bake for an additional 5 minutes until golden brown. Do not open the oven during baking to prevent collapsing.
- After baking, turn off the oven, wait for 5 minutes, then wedge a wooden spoon into the oven door to allow the Chouquettes to cool slowly and retain their shape. Allow them to cool completely.
- Fill the Chouquettes with the prepared Diplomat Cream. Lightly dust the Chouquettes with powdered sugar.
