- - 500g Cream Cheese (unsalted) or Quark
- - 4 Eggs
- - 120g Sugar
- - 1,5 tablespoon Vanilla Extract
- - Juice of Half a Bio Lemon
- - 20g Cornstarch
- - 290g Cream (liquid)
Directions
In a mixing bowl, beat Quark (or Cream Cheese) with sugar for about 20 seconds using a hand mixer or kitchen machine.
Add the vanilla extract.
Gradually add the eggs, one by one, and mix well after each addition.
Mix the cornstarch with the cream to avoid lumps, then add it to the mixture.
Squeeze the juice of half a lemon into the mixture and stir it in.
Preheat the oven to 240°C and line a round baking pan with a diameter of 20 cm with parchment paper.
Pour the cheese mixture into the prepared baking pan and tap the pan gently on the countertop a few times to remove air bubbles.
Bake the cheesecake for about 30 minutes until the top turns beautifully dark.
Allow the cheesecake to cool approx 4-5 hours and then serve.
