- - 200 g all-purpose flour (Type 405)
- - 100 g cold butter (cut into small cubes)
- - 50 g powdered sugar
- - 1 egg
- - A pinch of salt
- - Lemon zest
- - Apricot jam
Directions
In a bowl, mix the flour, powdered sugar, and a pinch of salt.
Add the cold butter cubes and quickly work them with your fingers until the mixture becomes crumbly.
Stir in the egg and lemon zest (if using) until a dough forms.
Shape the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes.
Preheat the oven to 180°C.
Roll out the dough on a lightly floured surface and cut out circles.
Place each dough circle into a greased small tartlet form, creating small pastry shells.
Fill each shell with apricot jam.
Cut lids from the remaining dough and place them over the apricot filling, sealing the pastries.
Bake the Gobeletti in the preheated oven for about 20-25 minutes or until they are golden brown.
Let them cool in the tartlet forms, then dust with powdered sugar.
