Peel and grate the apples. Cook them in a pan with sugar, lemon juice, and cinnamon for about 8 minutes until soft and thickened and most of the liquid has evaporated.

Stir in the chopped walnuts and let the filling cool completely. It should be soft but not watery.

For the dough, cream together the butter and powdered sugar. Add the oil, yogurt, vanilla extract, and salt and mix well.

Combine the flour and baking powder, then gradually add to the mixture until a soft, non-sticky dough forms.

Chill the dough for 20 minutes.

Roll out the dough to about 3–4 mm thickness and cut out circles (about 7 cm in diameter).

Gather the remaining dough, knead briefly, roll out again, and continue cutting circles until all the dough is used.

Place about 1 heaped teaspoon of filling onto one half of each circle. Fold over and gently press the edges to seal.

Bake at 170°C (340°F), top and bottom heat, for about 18–20 minutes. They should remain light in color with only slightly golden edges.
