Sift the flour into a bowl and make a well in the center. Add the yeast, 1 tsp of the sugar, and a little of the lukewarm milk. Let stand for about 8–10 minutes until the yeast becomes foamy.

Add the remaining sugar, egg, remaining milk, salt, and vanilla. Knead into a smooth dough. Gradually add the butter and continue kneading for 8–10 minutes until the dough is soft, elastic, and slightly glossy.

Cover and let the dough rise for 60–90 minutes, until noticeably doubled in size.

Divide the dough into 3 equal portions. Roll each portion into a circle about 22 cm (9 inches) in diameter.

Place the first dough circle on a sheet of parchment paper and spread thinly with 1–1½ tbsp blueberry jam. Place the second circle on top and spread with jam again. Place the third circle on top (without filling).

Lightly mark the center with a round cutter or glass (do not cut through). Cut the dough into 16 equal strips, stopping at the marked center.

Take two adjacent strips, twist one to the right and the other to the left about two times, then pinch the ends together. Repeat all around to form a large star.

Cover loosely and let the brioche star rise for another 20–30 minutes.

Whisk the egg yolk with the milk and gently brush the brioche.

Bake in a preheated oven at 180 °C / 350 °F (top/bottom heat) for about 20–25 minutes, until beautifully golden (baking time may vary depending on your oven).

Let cool slightly and dust with powdered sugar before serving. A soft, buttery brioche with a delicate blueberry filling - beautiful to look at and even better to eat
