    Preheat the oven to 200°C (390°F) top/bottom heat or 180°C (355°F) fan. Line a baking tray with parchment paper.

    Sprinkle some sugar on your work surface and roll out the puff pastry on top. Sprinkle sugar generously over the upper side as well. (Optional: mix in cinnamon or vanilla sugar.)

    First fold: Fold the right and left sides to the center. Press lightly and sprinkle some sugar on top.

Coarse or raw sugar stays grainy and can leave hard, sandy spots, while powdered sugar melts too fast and burns before the pastry is golden. If you only have granulated sugar, pulse it briefly in a blender to get closer to a fine texture.
