Bring water, butter, and salt to a boil in a small pot. Add flour all at once and stir vigorously until the dough forms a ball and a light film develops on the bottom of the pot.

Stir over medium heat for about a minute to remove moisture, then transfer to a bowl and let cool for 10 minutes. Mix in the eggs one at a time until smooth and glossy.

Fill the dough into a piping bag with a star nozzle and pipe rectangular waves onto a parchment-lined tray (6–7 pieces). Bake at 200°C (390°F) top/bottom heat for 30 minutes until golden.

Don’t open the oven during baking. Let the waves cool completely inside the turned-off oven with the door closed.

Whip the cream until stiff. Mix mascarpone, sugar, and vanilla until creamy, then fold in the whipped cream and mandarin pieces.

Slice the cooled choux waves horizontally and fill the bottom halves with the cream.

Place the tops back on gently and dust with powdered sugar. Serve right away or chill until serving. Tip: Use a kitchen scale for best choux results.
