Sift the flour for the yeast dough into a mixing bowl. Make a well in the center, add the yeast, a bit of the sugar, and some of the lukewarm milk. Stir gently and let sit for about 10 minutes until bubbly and activated.

Add the remaining sugar, salt, the rest of the milk, egg yolk, and soft butter. Knead everything into a soft, slightly sticky dough (about 8–10 minutes). Cover and let rise in a warm place for about 1 hour, or until doubled in size.

Meanwhile, prepare the cookie dough: mix the flour, sugar, and vanilla extract. Add the soft butter and 1 tbsp milk and knead briefly into a smooth dough. Add a bit more milk if needed. Wrap in plastic wrap and chill.

Divide the risen yeast dough into 6 equal parts and shape into balls. Divide the cookie dough into 6 pieces and roll each into a flat circle (dust with flour if necessary).

Cover each dough ball with a cookie circle—like a cap, but not all the way down to the bottom. Score the tops in a criss-cross (diamond) pattern using a sharp knife, and sprinkle with granulated sugar.

Let the melonpan rest for another 30 minutes, covered.

Bake in a preheated oven at 180 °C (350 °F) top and bottom heat for about 18–20 minutes, until lightly golden. Don’t overbake—they should stay soft. Melonpan tastes best fresh – with a crispy crust and soft center. If there are leftovers, just reheat them briefly and they’ll still taste amazing the next day.
