Peel, core, and finely chop the apples. In a saucepan, cook them with sugar, lemon juice, water, and a few apple seeds over medium heat for about 10–12 minutes, until soft and slightly broken down. Lightly mash the apples (don’t puree them). Remove from heat, take out the seeds, and let the compote cool completely.

In a bowl, beat the butter, sugar, vanilla, and salt until creamy. Add the egg yolk and mix briefly. Add the flour and ground almonds, then knead into a soft, smooth dough. Chill for 20–30 minutes.

Roll out the chilled dough on a lightly floured surface to about 0.8–1 cm thick. Cut out circles (Ø 5 cm / 2 in) and place them on a baking sheet lined with parchment paper.

Place about 1 tsp of apple compote in the center of each circle and gently spread it slightly. Sprinkle the edges with almond flakes and press them down lightly.

Bake in a preheated oven at 170 °C / 340 °F (top/bottom heat) for 18–20 minutes, until the edges are golden. They’ll still be soft when hot but will firm up as they cool.

Let them cool completely and dust with powdered sugar before serving. Soft, buttery, and delicately fruity – little apple-almond cookies with a golden shine and a hint of homemade charm.
